Malai kofta


Malai kofta is a popular dish among vegetarians. Kofta is basically fried dumpling balls made from mashed potatoes, paneer or vegetables or some combination of these. Here I am presenting the kofta made from mashed potatoes, paneer and khoya. The gravy is made either white in color with lots of cream and cashew base or like a spicy curry with spices and tomato puree.


Ingredients:

1 bowl boiled and mashed potato
1/2 bowl grated paneer
2 table spoon grated khoya (mawa)
1 small bowl chopped onion
1 small bowl chopped tomato
1/2 tablespoon tomato puree
2 tablespoon curd
2 tablespoon cream
1/2 cup water/ milk
1 tablespoon raisins
1 tablespoon poppy seeds
1 tablespoon chopped coriander leaves
1 tea spoon chopped ginger
1 tea spoon chopped garlic
1 tea spoon chopped green chili
1/2 cup oil
1 teaspoon gram flour
1 teaspoon cornflour powder/ gram flour
1 teaspoon salt
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon kasuri methi
1 teaspoon coriander powder
1 teaspoon garam masala powder
1-2 whole garam masala like- green & black cardamom, bay leaf, cinnamon stick

Method:

Take boiled potato, paneer, koya in a plate and mix well


Add corn flour /gram flour,chopped coriander, 1 teaspoon salt, ginger and green chili in the potato mixture,


Make small balls of the mixture and put 1 kismish in the center of each balls.


Bind the mixture and prepare your kofta and keep in a plate.


Now heat oil in kadahi/ Fry Pan and deep fry all kofta very gently.


Fry it till brown color and remove from fry pan, keep in the plate.


Now in other pan add 1 table spoon oil and roast chopped onion, tomato and ginger & Garlic .


Once its become cold, make a paste of the above mixture in grinder while also adding poppy seeds,


Heat 2 table spoon butter in pan add whole garam masala and the paste prepared in previous step.


Add salt, turmeric powder, red chili powder, cumin powder and garam masala powder. Fry it till becomes slightly thick and add tomato puree, curd, cream in the mixture and mix properly.


Fry it till it becomes dry and start oozing oil


Add 1/2 cup milk in it and mix it well.


 Once the curry/ gravy is boiled properly then add kofta in it.


Add 1 teaspoon kasuri methi and cover with lid, keep on low flame for another 2 to 3 min.
Remove from the pan and serve in a deep bowl, after garnishing with coriander leaves.

Serve Malai kofta with naan, phulka or plain steamed rice.
