Gobi tomato fry without Onion and Garlic.



There are many occasion we don't use Onions and Garlic in vegetables and we wonder how to make any vegetable without Onion and Garlic. So sharing with you a recipe of Gobi fry without Onion and Garlic. This is prepared based on tomato flavor.

Ingredients:

1 Cauliflower cut in small pieces.
2 tomato cut in small  pieces/ chopped .
1 tablespoon chopped ginger
1 whole red chilly
1/2 teaspoon cumin seeds
1 bay leaf
1 green elachi (cardamon)
1 teaspoon sugar
1 tablespoon salt (or according to taste)
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala powder
1 teaspoon Cumin powder.

Method:
  • Boil cauliflower in 1/2 cup water with chopped 1/2 table spoon ginger and Green elachi for 5 to 7 min.
  • Remove cauliflower (and other ingredients - ginger and elaichi) from the boiled water and let it cool
  • Heat oil in the open pan - add cumin seeds, bay leaf, whole chili , 1/2 tablespoon chopped ginger and sugar then add cauliflower and roast till turn light golden color.
  • Add chopped tomato, salt, turmeric powder, red chili powder, cumin powder and garam masala mix properly and cover with lid.
  • Cook in steam, without adding water etc for  to 10 minutes- keep stirring intermittently
  • Once properly cooked, serve hot with roti.
